Healthy Holiday Recipes

At Feeding America, we believe everyone should be able to enjoy a special meal during the holidays – a meal that’s not only delicious, but healthy as well.

In October 2013, we launched the Healthy Food Bank Hub, a site designed to educate and foster conversations around food insecurity, nutrition and health, as well as provide tailored resources to those working with food insecure populations. We dedicated a section of the Hub to healthy, budget-friendly recipes.

As holiday dinners are fast approaching, we wanted to share a couple that seem particularly savory during this special season. Both are simple and include only a handful of ingredients – making them more accessible to everyone. Read the recipes below – and enjoy!


Apple-Glazed Sweet Potatoes

Perfect for the holidays. Just simmer sweet potato slices with juice and serve.

Makes 4 servings.

½ cup per serving

Prep time: 10 minutes

Cook time: 30 minutes


2½ cups unsweetened 100% apple juice

½ teaspoon ground cinnamon

¼ teaspoon salt

2 pounds sweet potatoes (about 4 small potatoes), peeled and thinly sliced


1. Combine apple juice, cinnamon, and salt in a large skillet. Add sliced sweet potatoes and bring to a boil over high heat.

2. Reduce heat slightly and simmer potatoes, stirring occasionally, for 20 to 25 minutes or until potatoes are tender and juice has been reduced to a glaze. Serve while hot.


Pumpkin SoupPumpkin Soup

Enjoy the delicious flavors of the season with this simple yet flavorful savory pumpkin soup.

Makes 4 servings

1½ cup per serving


1 can white beans (15 ounce, rinsed and drained)

1 onion (small, or 2 tsp. onion powder)

1 cup water

1 can pumpkin (15 ounces, plain)

1 can chicken or vegetable broth, low-salt (14.5 ounces)

½ teaspoon thyme (or tarragon)

Salt and pepper (optional, to taste)


1. Blend white beans, onion, and water.

2. In a soup pot, mix bean puree with pumpkin, broth, and spices.

3. Cover and cook over low heat about 15 to 20 minutes until warmed through.

4. Sprinkle left over thyme or tarragon on top and serve.
